Giada's Quinoa Salad with My Twist ~ in an "Everything" Wrap ~

The other day I caught an episode of Giada At Home on the Cooking Channel where she was making a quinoa salad and a ceviche. I love both things; and, I had the ingredients needed to make the quinoa dish, so I went into the kitchen, inspired!

I did not have lettuce leaves to use for the wrap like Giada did, but I had some "Everything" wraps from Tumaro's Gourmet Tortillas {New York Deli Style Wraps} -- loaded with 10 g. fiber, only 80 calories per wrap, and super tasty for wraps! I chose to use those instead and they were wonderful with this salad!


Quinoa ~
1 ½ c. quinoa
2 c. vegetable stock
1 t. course kosher salt
zest of 1 lemon
Follow directions on package of quinoa for cooking. Let cool slightly.
            
             Dressing ~
             1/4 cup grapeseed oil
             3 tablespoons agave nectar
             2 tablespoons fresh lime juice (I only needed one juicy lime)
            1 tablespoon apple cider vinegar

1 tablespoon ground cumin
1 ½ t. kosher salt
1/4 teaspoon freshly ground black pepper
1 t. ground oregano
½ t. smoked paprika
dash of hot sauce
Two 15-ounce cans hominy, rinsed and drained
One 15-ounce can black beans, rinsed and drained
1/4 cup chopped fresh cilantro
Kosher salt and freshly ground black pepper
1 head butter lettuce, leaves separated

(I used the wraps instead -- loaded with 10 g. of fiber in addition to all the fiber in the quinoa and bean salad!)
