Girls' Night~ Hot Artichoke Dip~

Tonight my friend Tami came over and we spent the evening catching up and enjoying some light snacks and some Tropical Martinis ~ We actually ordered a movie -- a chick flick -- and talked through the entire thing --well we mostly laughed through the entire thing! Sometimes you really need that special girl time... {{hugs and kisses to my girlfriends! couldn't live without you!}}

The last time Tami and her husband were both over, I had served my Hot Artichoke Dip, and they both raved about it --so I thought it was worth a repeat!

This is such a delicious but SIMPLE dip to make. There aren't a lot of ingredients really, and the prep is minimal. The results are fabulous and rich. Serve with your favorite crackers.

Here's what you'll need to make this delicious treat ~

1 can artichokes in water, drained and coarsely chopped
1 1/3 c. light sour cream
1/3 c. safflower mayonnise (or any good quality mayo you like)
dash of hot sauce
½ t. sea salt
1 t. garlic powder
1 t. smoked paprika
1 T. fresh chopped basil
1 t. powdered oregano
1 ½ c. shredded cheddar
¼ c. shredded Parmesan
1 t. dried basil
Lightly spray a 9” pie plate with olive oil spray
Mix all ingredients together, reserving a little cheddar to top. Sprinkle on dried basil and extra cheese. Bake in a 350 degree oven for 20 minutes until bubbly. Serve with crackers.
